Banana Nut Waffles

Easy flexible blender waffle mix with flour, oats, banana, and nuts.

 2 Bananas (Large)
 ¾ cup Semi-Skimmed Milk
 210 g Allinson Wholemeal Plain Flour
 1 Large free range chicken egg
 ½ cup Halved pecan nuts
 30 g Maple Syrup
 2 tbsp Coconut Oil
 2 tsp Baking Powder
 ½ tsp Ground Cinnamon

In a blender or nutribullet combine the; 30g coconut oil (softened in the microwave), 3/4 cup of milk (can be cow's or nut based), 1 tsp vanilla extract, 2 large bananas, 2 tbsp maple syrup, and 1 large egg. Blend well.

Then in a large bowl combine the dry ingredients of; 1 1/2 cups wholemeal plain flour, 2 tsp baking powder, 1/2 cup pecan nuts (chopped into halves roughly), and 1/2 tsp ground cinnamon.

Pour the blended wet ingredients into the dry ingredients bowl and mix well with a spatula just until there are no dry spots remaining. Allow to rest for 5 mins whilst the waffle iron heats up.

Pour a full half cup of the final batter into the waffle iron and cook until the steam has stopped escaping and the waffle is cooked through (3-4 mins). Serve with Greek/Skyr yogurt and fruit.
