Quick turkey burger with Thai flavours.

500 g Turkey (Lean mince, 2% fat)
2 Chicken Eggs
1 Red Onion (medium)
2 Thick Slices of White Bread
30 g Red Thai Curry Paste
3 tsp Fresh Basil
½ cup Fresh Coriander Leaves

Blitz the two slices of bread into breadcrumbs using a blender and add these to a large bowl.

To the bowl add the turkey mince, 2 eggs, 2 tbsp red Thai curry paste, finely chopped red onion, and chopped herbs. Mix this well with your hands, divide into 8 patties.

Spray a frying pan with olive oil and fry on both sides for 5-7 minutes until cooked through. Alternatively place under a preheated grill to cook for 5-7 minutes each side. Serve immediately or cool and store in the fridge for up to 3 days.
